Chef Paul Prudhommes Magic Seasoning Blends has been in business since 1982 when customers from Chef Pauls New Orleans-based K-Pauls Louisiana Kitchen restaurant began asking to take home the chefs unique seasonings. What was once a garage-housed operation has grown to a 50,000 square-foot plant. Currently, Magic Seasoning Blends offers all-natural, MSG free products in sixteen different blends; Magic Pepper Sauce; seven ground, dried Magic Chiles; four Magic Sauce & Marinades; and several cookbook gift-packs. To use Magic Seasoning Blends in Chef Pauls recipes simply add up the amount of dry herbs and spices called for in the recipes "Seasoning Mix". Substitute the appropriate blend (for example, if you were doing a chicken dish, youd substitute Poultry Magic) in the proportioned amounts for each cookbook listed below: Substitute approximately ¾ the amount for Chef Paul Prudhommes "Seasoned America" Cookbook Substitute approximately ½ the amount for Chef Paul Prudhommes "Fork In The Road" Cookbook Substitute approximately the same amount for Chef Paul Prudhommes "Fiery Foods That I Love", "Louisiana Kitchen", "Kitchen Expedition", and "Louisiana Tastes" cookbooks
If a recipe calls for a sweet spice or an unusual ingredient subtract the amount of sweet or unusual spice prior to adding up the dry herb seasoning mix, then add back the subtracted ingredient(s) to the Magic Seasoning Blends amount required for the conversion.

Customer Rating:      Summary: Chef Paul Prudhomme's Best Seasoning Comment: I've been experimenting with Cajun food for quite sometime. I've talked with several different Creole Chefs and two of the three that I have spoked with have recommended this seasoning over any other. From now on, this is the only Creole seasoning I use on any meat. I've bought the variety pack of Chef Paul Prudhomme's seasonings, and nothing really stuck out like this one. If you have been using Chef Paul Prudhomme's seasonings, and haven't purchased this one, you are in for a treat. I can't find this specific product in the stores, which makes the 24-oz can a great buy.
Customer Rating:      Summary: Wonderfully Versatile! Comment: We absolutely love this seasoning. I worked years ago in a restaurant, and this is the seasoning they would put on fish, chicken and beef. It adds a lot of flavor, without adding a lot of fat and calories. We use it for veggies, soups, fish, you name it.
We can't seem to keep it in the house, and at approx $5.00 for a small bottle from the market, this large canister is a much better deal. It should last us a good long time.
