(clockwise from top-right)- Idiazabal - This naturally smoked sheep's milk cheese from hails from the Spanish side of the Pyrenees Mountains. Originally smoked in peasants' chimneys, Idiazabal has become one of the most noteworthy cheeses from Spain.
- Bruder Basil - This soft cheese comes to us from Bavaria, Germany, and is made in the tradition of Rauchkäse, a smoked cheese typical of the region. Originally, it was manufactured by Trappist Monks in the Abbey of Rotthalmunster. Today it is still smoked over hand-selected beech wood planks which gives it its special flavor.
- Smoked Kurpianka - This sausage-shaped cheese from Poland has a semi-firm texture and a mellow, milky flavor. It is an instant palate pleaser with its smoky edible rind and pleasing springy texture that melts in your mouth. Very versatile, Smoked Kurpianka can be eaten as a snack, sliced for sandwiches, cubed into a salad or melted for a Smoky Cheeseburger!
