Customer Rating:      Summary: Great, great! Comment: I never knew such a thing was called "western cut". I had discovered this product when it was sold at the Texas Renaissance Festival near Houston in 2004. The original supplier has since gone out of business, but Buffalo Bill's is a very close substitute.
The hotness won't blow your head off, and the sweet adds a nice contretemps, but this is a very . . . "very noice" . . . jerky.
The product I had grown used to was a little drier and a little hotter, but Buffalo Bill provides a fine, fine jerky. I like the idea of pulling out a giant slab of jerky, and getting 8 or 10 good-size "chaws" from it. My only regret is that a 1.4 LB bag is gone so quickly.
You can expect a razor-thin sheet of jerky that is easy to tear, or bite, into portions. Occasionally, you will encounter the "hidden treasure" of a chunk of fat that melts in your mouth. Crushed red pepper abounds, but it'll fall off by the time this jerky reaches your maw. What you are left with is a jerky you can tuck into your cheeks like a squirrel and enjoy for an hour, or a jerky you will be compelled to chew and swallow as quickly as possible so that you might get to the next bite.
If you like a smooth, slightly-hot, imminently chewable slice of jerky, I encourage you to try this product.
