Santoku knives have a narrower blade angle than traditional cooks knives. The Santoku manual knife sharpener applies a 17 degree edge to the blade. The sharpening process starts with coarse ceramic rods to set the edge and then finer ceramic rods are used to finish the sharpening.

Summary: Keep your Santoku factory sharp.
Comment: Santoku knives are very sharp, mainly due to the angle of the edge. Other knife sharpeners will ruin that edge. If you want an easy way to keep your Santokus sharp this does the job without dragging out the a complete set of sharpening stones.

Summary: Destroyed 2 santoku knife edges with this
Comment: This was received as a gift from my wife. I have 3 expensive santoku - two are Ken Onion. One of the Ken Onion and another less expensive had their blade edges badly, irreparably, chipped by this sharpener. Maybe it is some fluke defect as it appears ok when using it, but on the third or forth draw it chipped the blades. I am seeking recourse but not sure who will make good on a $200 knife for a $20 product. BE CAREFUL !!! I have been buying fine knives for 30 years-- not a novice.

Summary: I really like this - was pretty skeptical
Comment: This is the first knife sharpener that has actually worked for me. The only reason that I bought is that my Mom raved about it. My Wusthof santoku chef's knife was almost a year old and had never been sharpened. I only made a few swipes on the fine side and the difference was noticeable. My santoku knife is my favorite, so this is a small investment to keep it performing well.

Summary: Highly recommended - easy sharpening
Comment: I highly recommend this sharpener - it does a better job on my Global, Wushoff and Calphalon knives than any other sharpener. Including Global's recommended Minosharp with the two wet sharpening wheels, which does just an ok job in comparison.

It performs excellently on straight blades - you need to curve the knife a little for best effect if the knife's blade is curved near the top.

I think it loses some of its effectiveness after about 6 months of moderate to heavy use, but at this price I think it's well worth getting a new one if you spent on premium kitchen knives.

Also, it is impossible to cosmetically scratch your knives with this sharpener - it will touch the blade an nothing else...

Comment: This sharpener works well, but only on special cooking knives. I don't expect to be able to sharpen things like pencils, those Rambo knives with the compass, or ice skates.
