Gazpacho is a dish best served cold! This Spanish vegetable dish is from the South of Spain. A soup, but not a soup. Comforting, but refreshing. Rich, but very healthy and light, its perfectly satisfying as a cool summer meal, or as an opener to something warmer in colder seasons. Maybe dice in a few of your own fresh veggies such as tomatoes, green peppers, cucumber and onion and garlic. Serve it like it is; or like in Spain chill before serving. The perfect addition for a summer luncheon. Serve it with picos!
